Cheese Kimchi Fried Rice

Ingredients (for 2 serving)

  • 1-2 cups of chopped kimchi (adjust to taste)

  • 200g Spam (can substitute with sausage or pork)

  • 500g cooked rice

  • 1T soy sauce

  • 4T cooking oil (lard is great, but vegetable oil works well too)

  • 1 green onion

  • Egg

  • Mozzarella cheese



 

How to make


  1. Thinly slice the green onion.

  2. Cut the Spam into 2cm cubes.

  3. Heat 4T of oil in a frying pan, add the chopped green onions and Spam.

  4. Cook over low heat for 3 minutes to infuse the oil with the flavor of the onions (watch not to burn them).

  5. Increase the heat to high and optionally drizzle soy sauce around the edges of the pan to enhance the flavor.

  6. Add the cold rice and stir-fry for 3 minutes.

  7. Place the cheese around the edges and cover with a lid to melt the cheese.

  8. Top with a fried egg to finish.


Tips

  • It tastes even better when eaten with seaweed.

  • For an enhanced flavor, you can first fry the Spam and oil over low heat for 5 minutes to release the fat, then add the green onions to create a flavorful onion oil, though this might be a bit more tedious.

  • Sprinkle roasted sesame seeds on top as a final touch according to your preference.
